Freezer Crock Pot Cooking!

I am FINALLY getting around to typing this up. Not because I have pictures to share with you finally, because I don't (if you follow me closely you know my SD card got corrupted the other day. Sad.) But because I promised a couple pregnant friends that I would share the recipes with them. So, here ya go girls!

Now, the first thing I do is plan out my meals for the month. I don't usually do a whole month's worth of preparation at once, but I figure out what all I want to make that month so I can shop the sales. :) I will usually do about 10-15 big meals each month, I try to split them evenly between chicken, pork and beef. I usually find myself eating way more chicken than anything else though- we LOVE chicken!!

So here are my top 5 freezer meals, I prepare them all in one (or two) days and freeze them so all I have to do is dump it in the crock pot and leave it for a few hours. I usually spend one night chopping all the veggies after baby girl goes to bed, and the next day I finish my prep. If I'm doing Manicotti that gets it's own day. Stuffing manicotti is a pain.

#1- Chicken Burritos-This is my FAVORITE!!

You'll need:
-2 peppers
-1 onion
-1 1/2 lb chicken breast
-1 taco seasoning packet
-1 tsp chili powder
-1/2 tsp paprika
-1 tsp salt

Core the peppers and chop. Slice the peppers and chop. Get a 1 gallon size freezer bag and label it "5-6 hours on low, shred meat, serve on warm tortillas with favorite toppings" Then simply put all the ingredients in the bag and freeze.

#2- Aloha Pork Chops

You'll need:
-2 lb boneless pork chops
-1 Tbs lemon pepper
-1 tsp olive oil
-1 cup soy sauce
-20 oz can pineapple chunks
-2/3 c green/red pepper, sliced
-2/3 c red onion, wedged

Season pork with lemon pepper then put it in a 1 quart sized freezer bag. Pour soy sauce and pineapple in another quart sized bag, and the veggies in a third. Put all 3 bags in a gallon sized bag labelled with this: "Thaw. Cook chops through in a skillet on med-high heat. Add veggies for 1-2 minutes. Add pineapple and sauce and heat through. Serve over rice." It takes about 7 minutes to prepare :)

#3- Meatloaf

You'll need:
-1 1/2 lb ground beef
-1 pkg onion soup mix
-1 egg
-1/2 c ketchup
-1/4 c breadcrumbs

Line loaf pan with foil then a layer of Saran wrap- both must completely cover meatloaf. Combine all ingredients and shape into loaf in pan. Seal and freeze for a couple hours. Remove from pan and put back in freezer. I wrote on the foil "Unwrap and defrost in pan. 350* for 1 1/2 hours."

#4- Hawiian Chicken

You'll need:
-2 large boneless, skinless chicken breasts
-1/2 c white sugar
-1/2 c vinegar
-3 cloves garlic, minced
-2 Tbs soy sauce
-1/2 c pineapple juice
-1/2 can pineapple chunks

Label a gallon sized freezer bag "6-7 hours on low. Serve over rice. Shred chicken and put back in juice just before serving"Combine all ingredients in the bag and freeze.

#5- BBQ Pork Sandwiches

You'll need:
-Pork roast
-BBQ sauce
-Salt, pepper, garlic

Season the roast to taste. Cook in crock pot on low for 8 hours (I do this first so it's cooking while I'm getting everything else ready). When it's done cooking, shred the pork, add BBQ sauce and mix. Put the pulled pork in a freezer bag and freeze. To serve, thaw out and warm in microwave.
